Creamy Potato Salad

As we approach what I suspect will be the last few weeks of warm weather, I'm making a point of enjoying all of my favourite summer dishes including this mouth-watering recipe for my vegan potato salad. It's the perfect accompaniment at BBQs, potlucks or as a satisfying side dish.

We don't eat white potatoes often in our household but every now and again I get a good craving on for them and when I do this super simple salad is my go to.

Creamy Potato Salad

Serves 4-6


6 red potatoes or 4-5 russet potatoes, peeled, and cut into bite-sized pieces

1/2 red onion, diced

1 red pepper, diced

2 celery stalks, diced

3 green onions, cut on a bias

1 tbsp apple cider vinegar

1/3 cup vegan mayo

sea salt and pepper to taste


  • Bring a large pot of water to a rolling boil.
  • Add potatoes and cook until just fork tender.
  • Remove from heat and strain out water in a colander. Run cold water over the potatoes to prevent further cooking.
  • Combine all of the above ingredients in a large bowl and carefully taste for seasoning.
