If you follow me then you know that nothing gives me more satisfaction than taking an old favourite of mine and spinning it healthy like these Brown Rice Crispy Squares. Not to mention they are SOOOO easy - perfect dessert recipe to make with your kiddos!
Healthy & Delicious Rice Crispy Squares
Recipe is gluten-free, dairy-free and soy-free
1/2 cup brown rice syrup
3 Tbsp. nut butter (I used almond)
1/4 cup dairy free chocolate chips (I like Enjoy Life brand)
1 tsp vanilla extract
3 cups Brown Rice Cereal
Combine first 2 ingredients in a saucepan and gently heat over medium-low for about 5 minutes and remove from heat. In a large mixing bowl, combine nut butter and brown rice syrup with vanilla extract. Then stir in rice cereal and fold in chocolate chips. Mix thoroughly (I like to use a plastic spatula here). Firmly press mixture into a lightly oiled 8” x 8” square pan. Refrigerate about 30 min. Cut into 16, 2” squares and enjoy!
I truly love the simplicity of this recipe. Proof that eating healthy and mindfully does not need to be complicated.
Give this recipe an extra health boost by adding in chopped nuts/seeds or some dried fruit - this way it makes for more of a healthful snack than a dessert.
