Mason Jar Breakfast

This is my new fave! Really - it's so darn good! Yesterday, I even enjoyed mine as a mid-afternoon snack!

It's a complete meal that's satisfying and really tasty in a convenient mason jar that's perfect if you're someone who's on the go (and also really fun for kids!).

Mason Jar Breakfast

1 small mason jar

1/3 cup rolled oats

non-dairy milk (to cover the oats)

1/4 cup or more blueberries, strawberries or raspberries

1 tbsp chia seeds

2 tbsp raw nuts/seeds of choice (I used slivered almonds & crushed pecans)

1 tsp ground flaxseed

2 tbsp unsweetened coconut flakes

1/2 tsp ground cinnamon

raw honey to taste

Granola to top (optional)

Organic plain or greek yogurt (add over the berries - completely optional - I left this out).

Directions

Layer the following in the mason jar:

Start with the oats and cover with non-dairy milk.

Next is any berries of your choice.

Chia seeds, ground flax and coconut flakes get layered.

Top it off with cinnamon, drizzle with raw honey (or alternatively maple syrup) and top with some crunchy homemade granola.

Done & done! Seal with a lid if you're enjoying it later on or the next morning. Otherwise, grab a spoon and dig in!
